In addition to the nature of the soil and the climatic conditions, the quality of the vine material is of decisive importance for the final product, the wine. Here it is decided whether the plant was determined to the quality or quantity, which is also reflected in the prices of the vineyard. The Lipej Winery relies on quality here and it was cut from old Burgundian vineyards from selected vines with positive characteristics for the purpose of reproduction and grafted in the vine nursery (Hebinger, France) on suitable rootstocks so that they could be replanted. In this way, high quality vines have been planted. In total, three new plantations were made. This became necessary due to e.g. hail, wildlife & drought. The current stand is thus resistant and the roots had to reach depth to supply the plant with nutrients. As a result, more ingredients are absorbed. This is already reflected in the high extract values for the dry wines.

The work in the vineyard is carried out according to the guidelines of biodynamic cultivation. Natural products such as horn dung, horn pebbles, nettle, camomile, dandelion etc. are used. Here Rudolf Steiner's words are an orientation:


"Every farming actually fulfils its essence in the best sense of the word, if it can be understood as a kind of individuality. And every agriculture would have to approach - this cannot be achieved entirely, but it would have to approach - this state of being a self-contained individuality."


In the present time and with the people of this time, this is not an easy undertaking. The Lipej Winery tries to go this way and we do not see the annual inspections of the institutes as a restriction but in exchange with other wineries as an approximation of the set goals. All this is reflected in the glass, whereby each vintage speaks its own language.


A prerequisite for spontaneous fermentation is perfect grapes to initiate fermentation. Until the 1970s spontaneous fermentation was standard and all the large plants of the previous decades were produced in this way. The yeast flora on the skins and in the cellar is decisive for a characteristic product. The Lipej Winery uses this proven method and in the years of wasps or bee-eatings up to 70% of the grapes were sorted out. This justifies a higher price for wine in addition to demeter-based cultivation.


The use of oak barrels gives the wine the opportunity to mature and achieve a wider range of flavours. However, this influence can also have negative consequences. Thus, the wines can lose their original character and taste artificially or steal the tannin from the fruit. Here the dress should match the lady. The Pinot Noir with its complexity and filigree requires a fine robe and here it has been shown that the fine-pored Allier oak is the right partner. The Lipej Winery obtains its barrels from the Pauscha Manufactory in Austria. Mostly 500 litre drums are used.


Below you can see pictures of new plantations. Pinot Noir in Stara Vas and Riesling in Bušeća Vas. The steep south-facing slopes are not only difficult to cultivate, new plantations are also associated with extensive earthworks. The first results of the new plantations are expected in 2020.
